Who doesn’t love chocolate chip cookies and a glass of ice cold milk? I am sure we can all agree that these two food items make for the best combination.
Thankfully, you can make these better for you chocolate chip cookies that are equally delicious!
These cookies are better than their conventional counterparts because they are made with wholesome ingredients despite having brown sugar and butter. They are gluten-free, and have less carbs than many cookies because they are made with blanched almond flour.
What is Blanched Almond Flour?
If you are not familiar with almond flour, it is made with blanched almonds that have no skins (almonds boiled in water). The almonds are ground to a fine consistency. This flour bakes up really deliciously, and is my favorite gluten-free flour. Almond meal is made the same way and is also ground almonds.

Coconut Oil Refined or Unrefined?
Coconut oil also plays a big part in making these cookies not only perfectly moist, but tasty as well. They do have a slight coconut flavor ( I used traditional coconut oil). If you do not want a noticeable coconut flavor, you can use refined coconut oil which is odorless and flavorless.
I had some extra walnuts on-hand so I added those in conjunction with chocolate chips. You could also add dry fruit like raisins.
The BEST Ever Almond Flour Gluten Free Chocolate Chip Cookies
Ingredients
- 3 cups almond flour
- 1/2 teaspoon baking soda
- 3/4 cup brown sugar
- 1 pinch salt
- 1 stick Butter softened
- 1/4 cup coconut oil softened
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 1/2 cups chocolate chips
- 1/4 cup walnuts chopped
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix dry ingredients thoroughly.
- Add in eggs, melted coconut oil, melted butter, and extract, mix until combined.
- Fold in nuts and chocolate chips.
- Form tablespoon-sized balls on a parchment-lined baking sheet.
- 12 per tray sheet.
- Bake for 11-12 minutes.
