Chewy Peanut Butter Chocolate Chip Cookies

Chewy Peanut Butter Chocolate Chip Cookies are made with corn syrup and feature a chewy chocolate chip cookie base with the addition of peanut butter candies. This is a wonderful cookie recipe to enjoy during the cooler months.

Ingredients

  • 2 ½ cups all-purpose flour
  • 1/4 teaspoon kosher salt
  • 1 teaspoon baking soda
  • ¾ cup butter softened at room temp.
  • 1 egg
  • ¾ cup brown sugar
  • ½ cup Karo® Corn Syrup light variety
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips
  • 1 cup peanut butter candies

Instructions

  • Preheat oven to 350° F.
  • Using your stand mixer with the paddle attachment, add the butter and sugar-- beat on medium speed until light and fluffy.
  • Add the corn syrup, egg, vanilla, salt, and the baking soda.
  • Mix for 1 minute until fully combined.
  • Lower the mixer speed.
  • Slowly add the flour in.
  • Once combined, scrape down the sides, and then add the chocolate chips and candies.
  • You can refrigerate the dough if you want, but this recipe can also be baked right away.
  • Line two baking sheets with parchment.
  • Roll the cookie dough into 2 tablespoon-sized balls.
  • Space out cookies 6 to one sheet.
  • Bake for 9-11 minutes or until golden brown.
