- 4 lbs stuffing bread
- 2 cups celery food processed until fine
- 4 medium onions food processed until fine
- 1 1/2 sticks salted butter add 1/2 cup more if using chicken stock
- 3/4 tsp black pepper
- 1 1/2 tbsps poultry seasoning
- 1 tsp oregano
- 1/4 tsp salt
- 1 tsp onion powder
- 2 1/2 cups turkey drippings can substitute chicken stock
Mince your bread into small, bite-sized pieces. You want them to have texture and not be fine crumbed.
In a food processor, process your onion and celery until fine.
Set the large stockpot on your stove over medium-high heat.
Add the butter, celery, and onion to the pot.
Saute for about 5 minutes or until fragrant.
Add in the minced bread.
Mix the bread with the onion and celery.
Add in the 2 cup of turkey dripping or chicken stock. If your bread needs more liquid, add 1/2 cup more of drippings or stock.
Season generously with poultry seasoning, black pepper, onion powder, and oregano.
This stuffing takes elbow grease to mix and needs to constantly be stirred for 5 minutes.

Recipe Tips
For convenience
Process the celery & onion ahead of time and store in air-tight containers. You can also mince the bread and store it in the bags it comes in. I like to pinch the bread apart by hand to keep the texture in bite-sized pieces.
Substituting Chicken Stock for Turkey Drippings
Liquid like turkey drippings are the ultimate flavorful addition to this stuffing. You can use chicken stock, but turkey drippings add the ultimate flavor to this stuffing recipe.
If you cannot use turkey drippings additional butter (1/2 cup of salted butter) and 2-2/12 cups of chicken stock.
How to Freeze Stuffing
To freeze your bread stuffing, allow your stuffing to cool completely before adding it to a aluminum, freezer-safe pan. I prefer aluminum pans with lids which I wrap in additional foil to keep it fresh.
This stuffing will store in the freezer for up to one month for best taste. To heat, place in the oven at 350 for 20-30 minutes- Stir at the 15 minute mark. You can also add a little more butter to it to moisten.
