French Toast Casserole Bake (Fast and Easy)
Made with almond milk, and cinnamon brioche bread, this casserole is quick and easy and produces a custardy French toast bake for breakfast, or brunch.

- 1 lb. Brioche Style Cinnamon Chip Texas Toast standard size loaf
- 6 large eggs
- 1 cup almond milk
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 1/2 cup raisins
Icing (optional)
- 1 cup powdered sugar
- 1 1/2 tbsps. almond milk
- 1/2 tsp. vanilla extract
Preheat oven to 350° f.
Spray your casserole dish with nonstick or butter it to prevent sticking.
Break up bread loaf into small small sized chunks, and add them directly to the greased pan.
In a medium bowl, add cracked eggs, milk, cinnamon, and extract. Whisk until combined, and fluffy.
Pour mixture over the bread, and use a rubber spatula to help evenly coat all pieces.
Add raisins to the mixture evenly.
Bake for 30 minutes. The bread will rise slightly, and have a crisp top, and spring up once gently pressed.
Nutritional values may vary and are meant to be a guide.
You can skip the icing step and use traditional syrup. I would also suggest adding 1/4 cup of sugar to the custard batter.
Whole milk can be substituted for the almond milk.
Any type of thick bread can be used, but for this recipe, 1 pound of bread is required. If you use traditional white style bread, increase the cinnamon to 1 tablespoon.
