These are light, fluffy, gluten-free chocolate chip cookies that have an airy texture. They pair together the flavors of almond, chocolate, and coconut perfectly.

Ingredients

  • 3 cups almond flour
  • 1/2 teaspoon baking soda
  • 3/4 cup brown sugar
  • 1 pinch salt
  • 1 stick Butter softened
  • 1/4 cup coconut oil softened
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1 1/2 cups chocolate chips
  • 1/4 cup walnuts chopped

Instructions

  • Preheat oven to 350 degrees.     
  • In a large bowl, mix dry ingredients thoroughly. 
  • Add in eggs, melted coconut oil, melted butter, and extract, mix until combined.
  • Fold in nuts and chocolate chips.
  • Form tablespoon-sized balls on a parchment-lined baking sheet.
  • 12 per tray sheet. 
  • Bake for 11-12 minutes.

Notes

 These do not spread and will bake up soft and fluffy.
