Warm Kale Salad with Crispy Bacon
A warm kale & bacon salad that features sauteed mushrooms & onions seasoned with champagne vinegar, black pepper, and a hint of sugar. The warm veggies are placed on top of fresh raw kale with extra crispy bacon and a little provolone.

- 4 cups Kale
- 4 slices Bacon cooked until crispy and then crumbled into smaller pieces.
- 4 slices Provolone
- 1 large sweet onion sliced
- 1 lb mushrooms your choice sliced thinly
- 2 tablespoons champagne vinegar
- 1 tsp sugar
- 2 tablespoons butter
- Black pepper to taste
Wash and dry kale- set aside
In a skillet, heat butter (med heat), and add onions and mushrooms-cook for 3 mins
Add in vinegar, sugar, and salt
Pan-fry until onions are translucent
Cook bacon until crispy- crumble into smaller pieces
Cut 4 slices of provolone into little pieces
Plate kale in 4 plates
Top with warm veggies, bacon, and cheese
Enjoy warm!
