Ingredients
7cupszucchini peeled, cubed, remove excess seeds
⅓cuplemon juice
½cupgranulated sugar
1teaspoonground nutmeg
2teaspoonsground cinnamon
Crisp topping
1cupbrown sugar packed, can use light or dark*
½cupbuttersoftened
1cupall-purpose flour
1cupold-fashioned oats
Instructions
Preheat oven to 375°F. Grease a 9 x 13 baking pan with nonstick spray.
In a large bowl, combine the first five ingredients; toss to coat.
Transfer to a greased to greased baking dish.
In another large bowl, combine the remaining ingredients; cut in butter until crumbly. Sprinkle over zucchini mixture.
Bake 40-45 minutes or until golden brown.
Serve warm with ice cream. Enjoy!
