Zucchini Crisp (Tastes like Apple Crisp)

This mock apple crisp is made with zucchini and no apples at all! However, it tastes just like traditional apple crisp and is perfect for garden-fresh zucchini.

Ingredients

  • 7 cups zucchini peeled, cubed, remove excess seeds
  • cup lemon juice
  • ½ cup granulated sugar
  • 1 teaspoon ground nutmeg
  • 2 teaspoons ground cinnamon

Crisp topping

  • 1 cup brown sugar packed, can use light or dark*
  • ½ cup butter softened
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats

Instructions

  • Preheat oven to 375°F. Grease a 9 x 13 baking pan with nonstick spray.
  • In a large bowl, combine the first five ingredients; toss to coat.
  • Transfer to a greased to greased baking dish.
  • In another large bowl, combine the remaining ingredients; cut in butter until crumbly. Sprinkle over zucchini mixture.
  • Bake 40-45 minutes or until golden brown.
  • Serve warm with ice cream. Enjoy!
