Mini Corn Dog Muffin Bites

Hot dogs are baked into sweetened Jiffy Corn Muffin mix for a bite-sized lunch or party food kids will love!

Equipment

  • medium mixing bowl

Ingredients

  • 8.5 oz. Jiffy Corn Muffin mix
  • 1 large egg
  • cup whole milk
  • tablespoons honey
  • 5 hot dogs cut into fifths

Instructions

  • Preheat oven to 375 degrees f.
  • Spray a 24-count mini muffin tin very generously with nonstick baking spray.
  • In a medium-sized mixing bowl, add the milk and eggs that are required by the Jiffy box. Mix in the additional honey until combined.
  • Add 2/3 of batter to each muffin tin well followed by a fifth of a hot dog (about 1 inch long).
  • Bake for 8-12 minutes. Oven vary but these will be firm to the touch and golden brown when done.
  • Allow them to cool for 12 minutes before removing them from the muffin tin. Use a plastic knife to gently run along the edges if any mini muffins feel snug.
  • Enjoy with ketchup or your favorite dipping sauce.
