Ingredients
¾cuplight brown sugarpacked firm
½cupunsalted butter softened
1largeegg
1½teaspoonsvanilla extract
¼teaspoonsalt
½teaspoonbaking soda
1¼old-fashioned oats
1¼cupsall-purpose flour
1½teaspoonsground cinnamon
1½tablespoonslemon juice
1cupchopped Granny Smith appleschopped
Instructions
Preheat the oven to 350 degrees Fahrenheit.
Line a baking sheet with parchment paper and set aside.
In the bowl of a stand mixer, beat together the butter, and brown sugar until light and fluffy. Add in the egg and vanilla extract until well combined. Add the flour oat mixture and mix until just combined.
In a medium bowl, whisk together the flour, oats, cinnamon, baking soda, and salt.
Fold in the chopped apples until evenly distributed.
Use a spoon or cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 10-12 minutes, or until lightly golden brown around the edges.
Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
