Equipment

  • Plastic wrap
  • fridge
  • paring knife
  • measuring cup

Ingredients

  • 16 ounces cream cheese softened
  • cups shredded Monterey Jack cheese
  • cups shredded white cheddar
  • 1.5 ounces ranch seasoning equivalent to one small pouch*
  • tablespoons fresh parsley chopped
  • 5 peppercorns for eyes and buttons
  • 1 baby carrot carved to a point
  • 2 sprigs rosemary

Instructions

  • In a large bowl, mix your softened cream cheese, 11/2 cups of cheddar, ranch seasoning, and parsley.

  • Wrap balls tightly with plastic wrap and chill for at least one hour.
  • Once chilled, roll the balls in shredded Monterey Jack cheese to form the snow texture. Place the body base on a serving dish, and then press the head in. Add the peppercorn eyes, and buttons followed by the carrot nose.
  • Insert the rosemary arms and then fill the area with various crackers for dipping.
  • Serve immediately with choice of crackers.
