Cornflake Chicken

Cornflake Chicken made with Cornstarch is baked in the oven, and tastes as good as the deep fried version with much less calories. This oven fried chicken recipe is easy, and fool-proof for a crispy outer coating & moist inner.

Ingredients

  • 2 lbs chicken drumsticks
  • 2 cups crushed cornflakes
  • 1/2 cup Argo® Corn Starch
  • 3 eggs whisked
  • 1/4 tsp mustard powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp cayenne powder
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 5 tbsps butter can use margarine, melted
  • cooking spray

Instructions

  • Preheat oven to 425 degrees fahrenheit.
  •  Add melted butter to the bottom of your baking dish (spread it out).
  •  Crush corn flakes until they are in smallish pieces. 
  • Add cornflakes to a large bowl with spices and cornstarch.  
  • Crack eggs into a smaller bowl and whisk them until fluffy.
  • Dip chicken into egg mixture, and then into the cornflake mixture. 
  • Place drumsticks onto the baking dish.
  • Bake 15 minutes per side so both sides get golden brown.
  • After each side has cooked for 15 minutes, reduce heat to 350 and cook for an additional 15 minutes.  
  • Enjoy warm!
