Pretzel Bites with Cinnamon & Sugar

Pretzel Bites with Cinnamon & Sugar are made with pizza dough, and are flash boiled, and baked. They are then brushed with butter and rolled with cinnamon and sugar. Served with homemade icing, they are a delicious sweet treat.

Ingredients

  • 11 oz pizza dough
  • 1/2 cup baking soda
  • 3 quarts water
  • 1 egg beaten
  • 1 tbsp cinnamon
  • 1/2 cup white sugar

Icing

  • 1 cup powdered sugar add more if too thin
  • 1 tbsp water add more if too thick

Instructions

  • Preheat oven to 425 degree fahrenheit.
  • Add 3 quarts of water and baking soda to a medium stockpot and heat to a boil.
  • Unwrap pizza dough and stretch the dough out into two long strips. 
  • Cut out nuggets size chunks of dough.
  • Add half the dough to the boiling water, and boil for 30 seconds.
  • Once first batch is done, remove using a slotted spoon and place them on a paper towel; repeat until all dough is flash boiled. 
  • Dip each chunk into the egg wash and place them on a parchment-lined baking sheet.  
  •  Bake at 425 degrees fahrenheit for 14-15 minutes. 
  •  Whisk cinnamon and sugar together in a medium bowl.  
  • Once bites are done in the oven, brush each warm piece of dough with butter, and coat with cinnamon and sugar.  
  • To make icing, whisk ( with a fork) the powdered sugar and water. If it is to thin add a tablespoon more of sugar, and if it is too thick and a teaspoon more water.  
  •  Place them in a bowl and serve warm with icing.
