Chocolate Peppermint Cake Mix Cookies
Chocolate lovers rejoice, these Chocolate Peppermint Cake Mix Cookies combine the best of both dessert worlds. Fudgey, cake mix cookies with a hint of peppermint flavor, are topped with a swirl of white chocolate and a sprinkle of peppermint chunks.
Servings: 30 cookies
- 15.25 oz Devil's Food Cake Mix
- 1 tsp peppermint extract
- 2 eggs
- 1/3 cup vegetable oil
- 1/2 cup crushed candy canes
- 1 cup white chocolate morsels
Add cake mix, eggs, extract, and vegetable oil to a large mixing bowl.
Mix to combine with a wooden spoon.
Add dough to parchment paper. Roll up dough and twist up edges.
Place dough in the fridge and allow the dough to chill for one hour.
While dough is chilling, add candy canes to a zippered bag and crush with a rolling pin until they form small pieces.
When dough is ready to work with, preheat oven to 350 degrees f.
Form tablespoon-sized balls and space them 2 inches apart on a parchment-lined baking sheet.
Bake for 9-11 minutes.
Allow cookies to cool for 10 minutes before adding them to a cooling rack. This allows them to harden before icing.
Repeat above steps until all cookies are baked.
Microwave white chocolate morsels in 30 second intervals stirring in-between each session.
Once chocolate is creamy, add a teaspoon amount to each cookie.
Sprinkle with crushed peppermint.
