Quick & Easy Strawberry Compote

This Easy Strawberry Compote recipe is super quick and requires minimal effort. Ready in under 15 minutes from start to finish, it cooks in less than 10 minutes. All you need is one pound of fresh strawberries, 1 lemon, and sugar to make this decadent waffle, cheesecake, or pancake topping.

Equipment

  • 6-quart saucepan

Ingredients

  • 1 lb fresh strawberries
  • 2 tbsps. granulated sugar
  • 2 tbsps fresh lemon juice (half a large lemon)
  • 1 tsp fresh lemon zest (half a large lemon)
  • 2 Van's Organic Waffles *or your preferred flavor.

Instructions

  • Wash and dry fresh strawberries.
  • Carefully hull each one. (slice off stems and white parts).
  • Slice berries in half.
  • Cut your lemon in half and squeeze out the juice. Be sure to remove any seeds.
  • Zest one half of the lemon. I zested the juiced portion and saved the other side for lemon water.
  • Add berries, juice, sugar, and zest to a 6-quart saucepan.
  • Over medium-low heat warm berries until boiling. Be sure to stir the mixture frequently.
  • One boiling, reduce to a simmer for about 3 minutes. You want the berries to be tender, but not mush. It is okay if some retain their shape.
  • Remove pan from heat.
  • Toast Van's Original Waffles. Feel free to increase waffles to cater to your family size.
  • Serve compote warm over Van's Organic Waffles (or your favorite flavor).

Notes

  • I place mine in a jar and allowed it to cool before storing in the fridge.
  • Stored properly in a jar, this lasts two weeks in the fridge.
Using Frozen Berries
You can 100% use frozen berries for this, but I would up to sugar by one tablespoon or add one tablespoon of honey because they tend to be tart.
