Pizza Salad Recipe

Love salads? Me too! This Pizza Salad features some of your favorite pizza toppings in salad form. Enjoy this yummy, fresh salad as a quick meal and try these pita crisps that pair really well as a side.

Ingredients

  • 1 broccoli head chop off florets
  • 1 green pepper remove seeds, and cut into chunks
  • 1 yellow pepper remove seeds, and cut into chunks
  • 1/2 cup mushrooms
  • 1 red onion small, sliced thinly
  • 5 cups romaine lettuce blend
  • 1 cup cherry tomatoes
  • 1/2 cup croutons
  • 1/2 cup pizza cheese
  • 30 pepperonis

Pita Crisps

  • 2 small pita breads
  • 2 cloves garlic
  • 2 tbsps. olive oil
  • 1/4 cup pizza cheese

Instructions

  • Wash, dry, and chop up your veggies.
  • Add them to a large bowl, and then top with pepperoni, and cheese
  • Serve with oil and vinegar dressing, or your favorite type.

Pita Crisps

  • Slice each pita into 8 triangles, brush with olive oil, sprinkle with garlic and cheese.
  • Bake at 350 degrees Fahrenheit for 12 minutes.

Notes

Dressing

This pizza tastes best with an oil and vinegar based dressing. Balsamic, Italian, and a simple oil and vinegar base dressing enhance the flavor nicely. 

Storing

For meal prep, divide salad portions up, however do not add the cheese or croutons. Add the cheese and croutons to separate bags or small containers to keep them fresh.
