14ouncesEckrich Smoked Sausage
1½poundsbaby potatoes halved
2Vidalia onions sliced into thick chunks.
3tablespoonsExtra virgin olive oil
1teaspoonItalian herbs
½teaspoononion powder
½teaspoongarlic powder
salt & pepper to taste
Instructions
Preheat oven to 400°F. Line a large baking sheet with nonstick aluminum foil.
Slice sausage into ¼ thick coins, and halve baby potatoes. Peel and cut the onion into thick slices. Do not break the pieces into smaller sections because they will burn if too thin or small.
Add sliced/cut veggies into a mixing bowl and coat with oil and spices. Be careful to try to leave the onion in larger chunks when coating.
Place the pan into the oven on the center rack. Bake for 15 minutes at 400°F.
After the first 15 minutes, carefully remove the pan from the oven. Flip over all of the ingredients. Return the pan to the oven and bake another 15 minutes. The meal will be golden brown when ready, and the potatoes will be tender.
