Ingredients

  • 1 lb chicken breasts
  • 1/3 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 3 whole cucumbers
  • 1/2 cup cherry tomatoes

Instructions

  • Grill you chicken breasts until clear juices run freely from them.
  • Shred chicken, and mix with your mayo and spices.
  • Chill chicken until you are ready to stuff your cucumber cups.
  • To make cucumber cups, cut your cucumber into three pieces. You will want to slice them evenly across so that they sit level on a plate.
  • Using a melon baller, scoop out about 1 1/2 inches of melon.
  • Fill cups with desired amount of chicken salad, and then top with a cherry tomato.
  • These are really adorable party foods, and are perfect for "cupcake themed" parties.
