- 1 lb chicken breasts
- 1/3 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 3 whole cucumbers
- 1/2 cup cherry tomatoes
Grill you chicken breasts until clear juices run freely from them.
Shred chicken, and mix with your mayo and spices.
Chill chicken until you are ready to stuff your cucumber cups.
To make cucumber cups, cut your cucumber into three pieces. You will want to slice them evenly across so that they sit level on a plate.
Using a melon baller, scoop out about 1 1/2 inches of melon.
Fill cups with desired amount of chicken salad, and then top with a cherry tomato.
These are really adorable party foods, and are perfect for "cupcake themed" parties.
