Low Carb Cauliflower Pizza Crust Recipe

- 4 cups cauliflower grated
- 2 cups Parmesan Cheese
- 2 eggs
- 1/2 cup tomato sauce
- 1 cup Mozzarella Cheese
- 1 small red onion sliced
- 1 tsp Italian Seasoning
Grate both heads of cauliflower until you get four solid cups.
Add cauliflower to a large glass bowl and microwave for 10 minutes. I suggest using a paper towel to make a steaming effect.
Preheat oven to 350 degrees
Remove from microwave and mix in eggs, spices and Parmesan cheese
Prepare two parchment lined baking sheets, or pizza pans
Divide mixture and form two crusts
Place in oven for 15 minutes
Remove from oven, and add sauce, and toppings
Return to oven for another 10-15 minutes. Your edge may look a little well done, but that is due to the cheese in the mixture.
Remove from oven and allow them to cool.
Serve your low carb cauliflower pizza with a nice healthy side salad.
