- 1 can Bella Portofino Tuna drained
- 2 whole 7 inch, small zucchinis sliced into 1/4 inch slices
- 1 medium tomato diced
- 1 tablespoon red onion diced
- 1 tablespoon chopped cilantro
- 1 tablespoon chopped green onion
- 1/4 cup Greek yogurt
- 1/4 cup reduced fat shredded mozzarella cheese
- 2 sprays Extra Virgin Olive Oil (EVOO)
Heat oven to 350 degrees f.
Spread zucchini in a large cast Iron skillet, spray with EVOO, and bake for 5 mins. You can add some salt & pepper if you wish.
Once they are done baking, remove from oven using oven mitts.
Add the tomato, onion, tuna, and cheese.
Bake for an additional 5 minutes.
Remove from oven using oven mitts.
Top with green onion, cilantro, and sour cream.
Serve right away!
