  • 1 can Bella Portofino Tuna drained
  • 2 whole 7 inch, small zucchinis sliced into 1/4 inch slices
  • 1 medium tomato diced
  • 1 tablespoon red onion diced
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped green onion
  • 1/4 cup Greek yogurt
  • 1/4 cup reduced fat shredded mozzarella cheese
  • 2 sprays Extra Virgin Olive Oil (EVOO)


  • Heat oven to 350 degrees f.
  • Spread zucchini in a large cast Iron skillet, spray with EVOO, and bake for 5 mins. You can add some salt & pepper if you wish.
  • Once they are done baking, remove from oven using oven mitts.
  • Add the tomato, onion, tuna, and cheese.
  • Bake for an additional 5 minutes.
  • Remove from oven using oven mitts.
  • Top with green onion, cilantro, and sour cream.
  • Serve right away!
