Servings: 12 medium muffins
- 2 cups white flour
- 3/4 cup white sugar
- 1 teaspoon baking soda
- 1 pinch salt
- 1/2 cup whole milk
- 2 large eggs
- 4 squares of 100% baking cacoa chopped *can sub in semi-sweet chips if wanted
- 1 ripe Avocado
- 2 small ripe bananas
Preheat oven to 375 f.
Grease a muffin tray with nonstick spray.
In a large mixing bowl, mash your bananas, and avocado.
Mix in the eggs and milk
Add the sugar, baking soda, salt, and flour; mix well, but do not over mix or puree the batter.
Fold in chocolate chunks.
Fill muffins cups 3/4 way full.
Bake for 15-16 minutes or until done.
