Baked Granola Recipe
Save some money by making your own granola at home. This Coconut Raisin Granola contains raisins and unsweetened coconut flakes. It is a delicious breakfast or snack granola made from pantry staples.
Servings: 8 portions
- 2 cups old fashion oats
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 2 tablespoons coconut oil melted
- 1 large egg white
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup toasted coconut flakes
Preheat oven to 350 degrees Fahrenheit.
Line a baking sheet with parchment paper.
In a large bowl mix the oats, brown sugar, and cinnamon.
Mix in egg white, melted coconut oil and extract.
Mix until all the oats are damp.
Bake for 15 mins at 350, stir and then return to oven to bake for another 15 mins.
Once oats come out of the oven, be sure to mix in the coconut flakes, and the raisins.
Store in an air-tight container for up to a week-I have not personally tried out longer. Tastes delicious on yogurt, or fresh fruit. You can also add it to warm oatmeal or enjoy it as an on the go snack.
