Bacon, Spinach Caramelized Onion Pasta

  • 6 ounces of whole wheat penne pasta
  • 4 ounces of chopped bacon
  • 1 large yellow onion diced
  • 2 tablespoons of butter
  • 2 tablespoons of brown sugar
  • 1 cup generousof spinach
  • salt, pepper, garlic powder to taste
  • 1/2 cup of Parmesan cheese sprinkles


  • In a large skillet, add your bacon and cook for 1-2 mins until bacon is halfway done
  • In that same pan, and some butter, sugar, spices, and onion; sautee until the onion becomes tender, and bacon starts to crisp up.
  • Boil pasta in salted water until al dente
  • Once the pasta is done, drain it loosely, but leave a tiny amount of water and add it to the skillet with the bacon, and onion mixture.
  • Mix in the spinach and stir until tender
  • Sprinkle with Parmesan before serving.
