- 15 ounce can of black beans drained
- 1/2 ripe avocado
- 3/4 cup brown sugar
- 1 egg
- 2 egg whites
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 2 tsps vanilla extract
- 1 tsp coconut oil
- 2/3 cup cocoa powder
- 2 squares semi-sweet baking chocolate chopped
Preheat oven to 375
Line a 9 x 9 pan with parchment paper
In a blender, blend all the above ingredients until creamy- batter will be thick but moist
Fill pan up and then top with baking chocolate chunks
Bake for 30-35 mins or until an inserted toothpick comes out clean
