Ingredients

  • 15 ounce can of black beans drained
  • 1/2 ripe avocado
  • 3/4 cup brown sugar
  • 1 egg
  • 2 egg whites
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 2 tsps vanilla extract
  • 1 tsp coconut oil
  • 2/3 cup cocoa powder
  • 2 squares semi-sweet baking chocolate chopped

Instructions

  • Preheat oven to 375
  • Line a 9 x 9 pan with parchment paper
  • In a blender, blend all the above ingredients until creamy- batter will be thick but moist
  • Fill pan up and then top with baking chocolate chunks
  • Bake for 30-35 mins or until an inserted toothpick comes out clean
