- 2 1/2 lbs. Ground Chourico You can ground links yourself in food processor
- 1 stick salted butter
- 5 cloves garlic minced
- 1 small sweet onion finely diced
- 8 ounces beer
- 6 ounces tomato paste
- 1 tsp TABASCO Sauce * can add more if you like spice
- 18 Mini Papo seco rolls (Portuguese Buns)
In a food processor, grind the chourico up a little more to make it finer
In a medium stock pot, saute butter, garlic, and onion over medium heat. Cook for about 3 minutes.
Add chourico to the pan, with the beer, tomato paste, and TABASCO.
Saute chourico over medium heat and the bring to a simmer.
Cook for about 15 minutes until alcohol has burned off.
Serve chourico in mini Portuguese Rolls. If making for a party, allow chourico to fully cool before wrapping each one.
