Easter S'mores Bark

This delicious bark recipe is the perfect way to celebrate Easter. It’s made with your favorite treats, like graham crackers and marshmallows layered with white chocolate! You can even make this fun treat disappear before you know it because there are only six ingredients making it an easy treat for all ages to recreate.

Equipment

  • 9 x 13 or 8 x 13 jelly roll pan
  • parchment paper
  • nonstick spray
  • refrigerator or freezer
  • rubber spatula
  • Microwave
  • 2 microwave-safe dishes

Ingredients

  • 10 ounces mini marshmallows
  • ¼ cup unsalted butter
  • 8-12 whole honey graham crackers Cracker number depends on pan size as noted.
  • 12 ounces white chocolate
  • ½ cup Palmer Double Crisp Foil eggs unwrapped
  • ½ cup jelly beans
  • 1 tablespoon Easter sprinkles

Instructions

  • Line a 8 x 13 (or 9 x 13) pan with parchment paper sprayed with nonstick spray. Add a layer of graham crackers to the parchment paper. You might need to to break some of the crackers up to nicely fit them on the pan.
  • In a large, microwave-safe bowl, add the mini marshmallows, and butter. Microwave on high for multiple 30-second intervals stirring in-between each with a greased rubber spatula. Once mixture is fluffy and mixed (butter should be melted) pour the mixture over the graham crackers, and spread with the greased spatula.
  • In a smaller microwave-safe bowl, add the white chocolate chips. Microwave for 30 seconds stirring in-between each session until creamy.
  • Pour the melted chocolate over the marshmallow layer and smooth with a rubber spatula.
  • Add candy toppings and sprinkles. I tried to space my candies out to be even.
  • Place the bark in the fridge for 2 hour, or the freezer for 1 hour. This is best if you make it the night before.
  • Once hardened, use a sharp knife to cut through your bark. Enjoy!

Storing
I found that storing this bark in an airtight container in the refrigerator worked best. You can store it easily for up to 2 weeks. Due to the possible stickiness of marshmallow I suggest keeping this marshmallow bark chilled. You can also freeze it for up to 3 months in an airtight container or freezer bag.
