I was compelled to make some fall-themed chocolate chip cookies to showcase how Karo® Corn Syrup can help you achieve chewy, perfectly textured cookies.

How to Make Chewy Cookies
While there are different techniques to achieve chewy cookies, my favorite is to use corn syrup in the batter. I love how corn syrup allows cookie recipes like the one featured to have a chewy outer and soft inner texture.

My daughter helped me make these Chewy Peanut Butter Chocolate Chip Cookies and now knows that Karo® Corn Syrup can be used in not just pecan pie, but also in chocolate chip cookie recipes.
Ever since I was a small child, I have always enjoyed baking with my mother. These days, my kids LOVE to watch me bake, and they also can be the best little helpers. They love to add ingredients, mix, and, of course, taste test!
Ingredients
- 2 1/2 cups all-purpose flour
- 1 tsp kosher salt
- 1 tsp baking soda
- 3/4 cup butter softened at room temp.
- 1 egg
- 3/4 cup brown sugar
- 1/2 cup Karo® Corn Syrup light variety
- 2 tsps vanilla extract
- 1 cup chocolate chips
- 1 cup peanut butter candies

How to Make Chewy Peanut Butter Chocolate Chip Cookies

For this recipe, you will need a standmixer with a paddle attachment, a rubber spatula, parchment paper, a large cookie scoop, and 2 standard baking sheets or a large baking tray. A cooling rack and cookie spatula are also equally important.

- Preheat oven to 350 degrees f.
- Using your stand mixer with the paddle attachment, add the butter and sugar– beat on medium speed until light and fluffy.
- Add the corn syrup, egg, vanilla, salt, and the baking soda.
- Mix for 1 minute until fully combined.
- Lower the mixer speed.
- Slowly add the flour in.
- Once combined, scrape down the sides, and then add the chocolate chips and candies.
- You can refrigerate the dough if you want, but this recipe can also be baked right away.
- Line two baking sheets with parchment.
- Roll the cookie dough into 2 tablespoon-sized balls.
- Space out cookies 6 to one sheet.
- Bake for 9-11 minutes or until golden brown.

- 1 cup peanut butter candies

Hello, you can use regular salt as you wish.
What is the purpose of kosher salt. I made squares that called for it and had to throw them out. They were not eatable. Can I leave it out?

The recipe calls for a tsp. of kosher salt but the directions make no mention of whether to add it to the batter or to sprinkle on top. I am assuming it is to be added to the batter since I don’t see it sprinkled on top of the cookies in the picture.
