Cornflake Chicken made with Argo® Corn Starch is baked in the oven and tastes as good as the deep fried version with much less calories. This oven fried chicken recipe is easy and foolproof for a crispy outer coating and moist inner.
Baked chicken dinners are some of my family’s favorite meals. Chicken is a wonderful protein because it is available in many different cuts and is relatively low in fat.
I admit, I have never fried my own chicken, or deep fried anything for that matter. You will not find any traditionally fried foods on my site because (1) I am scared to fry anything, and (2) the grease splatter makes a huge mess.
However, there are ways to make cuts of chicken like drumsticks taste fried. With ingredients like Argo® Corn Starch, you can make the crispiest chicken ever without deep frying! Of course, you can deep fry or air fry this recipe, but we prefer oven frying!

That is exactly what I did with my go-to recipe for Cornflake Chicken to create an airy, crunchy texture!
Ingredients for Cornflake Chicken
This recipe can be used for pretty much any cut of chicken. For this particular recipe, I decided to use drumsticks because I had them on-hand, but this is also spectacular with thighs or breasts!
- 2 lbs chicken drumsticks
- 2 cups of crushed corn flakes
- 1/2 cup Argo® Corn Starch
- 3 eggs
- 1/4 tsp mustard powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 14 tsp cayenne powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 4-5 tablespoons melted butter or vegetable spread
- cooking spray
How to Make Cornflake Chicken
Preheat oven to 425 degrees fahrenheit .
Add butter pats to the bottom of your baking dish (spread them out). You can also melt the butter and brush it along the bottom of your baking dish.
Crush corn flakes until they are in smallish pieces.
Add cornflakes to a large bowl with spices and Argo® Corn Starch.
Crack eggs into a smaller bowl and whisk them until fluffy.
Dip chicken into egg mixture, and then into the cornflake mixture.
Place drumsticks onto the baking dish.
Bake 15 minutes per side so both sides get golden brown.
Reduce heat to 350 and cook for an additional 10 minutes.
Enjoy warm!

- 3 eggs whisked
- 1/4 tsp mustard powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp cayenne powder
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 5 tbsps butter can use margarine, melted
- cooking spray
Instructions
- Preheat oven to 425 degrees fahrenheit.
- Add melted butter to the bottom of your baking dish (spread it out).
- Crush corn flakes until they are in smallish pieces.
- Add cornflakes to a large bowl with spices and cornstarch.
- Crack eggs into a smaller bowl and whisk them until fluffy.
- Dip chicken into egg mixture, and then into the cornflake mixture.
- Place drumsticks onto the baking dish.
- Bake 15 minutes per side so both sides get golden brown.
- After each side has cooked for 15 minutes, reduce heat to 350 and cook for an additional 15 minutes.
- Enjoy warm!

My Mom used to make chicken this way many years ago and all of us kids would fight over the crunchy stuff stuck to the tin foil on the pan. Very yummy. Enjoy !!!
