Based on a box – Yes, this does only work with some brownie mixes. A box of Duncan Hines Chewy Fudge Brownie Mix or Ghirardelli 18.3 ounce sizes are tried and tested with the add-ins found in the recipe card. Please be advised that Betty Crocker Brownie mix will not cut it for these, and will result in a disaster.
Adaptable – I love how these brownie cookies can accommodate my cravings. Some days, I am all about the chocolate and other days I might be feeling peanut butter or nuts. That is okay because you can add up to one cup of mix-ins. Might I suggest half crushed walnuts, and half chocolate chips?
Nicely textured – With this recipe, patience is key! If you can mix the dough and let it chill for 2+ hours, you will achieve the results as pictured. At just 9-10 minutes in the oven, your cookies will be fluffy (not spread), and have a nice “ice cream scoop” texture. You just need to cover, chill (2+ hours), and scoop your dough out with a 2 tablespoon-sized cookie scoop.

How to Make Fudge Brownie Mix Cookies
In a large bowl, add the full contents of the brownie mix pouch, 2 large eggs, 1/4 cup of oil, and 1/4 cup of all-purpose flour. Using a wooden spoon, mix until thick and combined. The dough will be sticky. Fold in the chocolate chips and form the dough into a ball.
Wrap the dough in plastic wrap and refrigerate for 2 hours or more. You can prepare this dough up to 24 hours in advance.
Using a large-sized cookie scoop (ours is 2 tablespoons), scoop balls of dough and place them 2 inches apart on a large parchment-lined baking sheet. Cookies should resemble ice cream scoops as pictured, and be firm.
Bake for 9-10 minutes at 350 degrees Fahrenheit. Allow cookies to cool for 5 minutes before transferring them to a cookie rack; repeat until all cookies are done.
Storing Brownie Cookies
These cookies can be stored in an airtight container once fully cooled for up to 5 days. For a real treat, you can heat them in the microwave for 10-15 seconds to warm them up before eating. These taste yummy alone or when served with vanilla ice cream.
Additionally, you can freeze these cookies for up to 3 months. Simply bake, cool, and store them in an airtight container. To enjoy allow them to thaw in the refrigerator a few hours before enjoying them.
