Baked Pumpkin Donuts with Walnut Glaze are made in an electric donut maker, but can also be made in a donut pan. They are perfect for fall breakfasts, and snacks. Each bite contains warm notes of pumpkin with the perfect blends of spice.
The heat may still be turned up high here is Southern New England, but that doesn’t mean I cannot wish for Autumn. I love the Fall so much and am super excited to start sipping some hot apple cider, pumpkin spice coffees, and carving some Jack o’ lanterns.
To give you all a head start on pumpkin everything, I have set out to make ten pumpkin desserts in the next 10 weeks–most likely much less time at the rate I am going.
Today, I have already made some adorable Sweet Pumpkin Donut Hole Acorn Treats, and some Baked Pumpkin Donuts. I just love working with fall inspired ingredients so it was a fun and easy feat!
Making Baked Pumpkin Donuts is actually super duper easy if you have a donut maker, or donut pan. I like then baked to lessen the calories and make them non-greasy. I actually created a mega hack with the glaze and used semi-melted vanilla frosting which works out well.
I didn’t feel like using up so much powdered sugar so this shortcut was pretty “sweet”.
I love the flavor of walnuts and pumpkin cake so rather than add sprinkles, or candies I added some crushed walnuts. These worked out well and added a pretty touch to these pumpkin donuts.
The pumpkin donut recipe is one that I swear by and use in most of my pumpkin muffin/cake/donut recipes because it is slightly dense, and contains just the right amount of “sweet”. I am not a fan of overly sugary treats so these are just right for me.
These Glazed Pumpkin Walnut Donuts would go so well with a hot cup of pumpkin spice coffee which I cannot wait until my local coffee shops start selling. I anticipate the first hot cup of pumpkin spice coffee, or even latte–they said “next week” so I will be there bright and early Monday morning. I will skip the donuts though because mine are better.
Ingredients to make Pumpkin Spice Baked Donuts (with Walnut Glaze)
- softened unsalted butter melted- 1/4 cup
- white sugar-1/2 cup
- egg-1
- vanilla extract- 1 tsp
- canned pumpkin- 1/2 cup
- all purpose flour-1 cup
- baking powder-1/2 tsp
- baking soda-1/2 tsp
- kosher salt-pinch
- nutmeg-1/2 tsp
- cinnamon-1/2 tsp
- vanilla frosting, melted-1/2 cup
- crushed walnuts- 1/3 cup
How to Make Baked Pumpkin Spice Donuts
In a large bowl, whisk your dry ingredients.
Add in your pumpkin, egg, extract, and butter until well combined.
Your batter with be very thick, but that’s spot on!
Add to greased donut maker, and bake for 6-8 minutes or until golden brown.
Once donuts are cooled, frost them with melted frosting and then sprinkle crushed walnuts on top.
Glazed Pumpkin Walnut Donuts
Ingredients
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 cup canned pumpkin
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- pinch kosher salt
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/ cup vanilla frosting melted
- 1/3 cup walnuts crushed
Instructions
In a large bowl, whisk your dry ingredients.
- Add in your pumpkin, egg, extract, and butter until well combined.
