Mini Corn Dog Muffin Bites are the perfect appetizer for your next party! These bite-sized corn dogs are made with hot dogs, and Jiffy Muffin mix! They’re easy to make in just a few minutes, and can be made on a budget. Add some real honey to the simple batter for a tasty, sweet touch!
If you have picky kids like I do, finding easy meals they’ll enjoy can be tough. One week they love a food and the next they hate it! Recently, I was able to get a good deal on quality hot dogs so I had quite a few on hand that I needed to use but I had no buns. I did however have plenty of Jiffy Corn Muffin Mix available.
That reminded me to bake up a batch of these Mini Corn Dog Muffin Bites. They couldn’t be any easier and quicker to make! Our kids love honey corn dogs so I usually add a tablespoon of honey to add a touch of sweet.
Mini Corn Dog Muffin Bites Ingredients
Hot Dogs – I am admittedly a hot dog snob so I prefer Kayem brand hot dogs. You can use any variety you have available or what you can afford. On standard hot dog made 5 bites.
Corn Muffin Mix – I used Jiffy Corn Muffin Mix because it is a small box that makes 24 mini bites. It is under $1 and tastes good! You’ll need milk & an egg to make this!
Honey – I add one tablespoon of real honey to the batter to slightly sweeten these corn dog bites.
Making these Mini Corn Muffins
Preheat oven to 375 degrees f.
Spray a 24-count mini muffin tin very generously with nonstick baking spray.
In a medium-sized mixing bowl, add the milk and eggs that are required by the Jiffy box. Mix in the additional honey until combined.
Add 2/3 of batter to each muffin tin well followed by a fifth of a hot dog (about 1 inch long).
Bake for 8-12 minutes. Oven vary but these will be firm to the touch and golden brown when done.
Allow them to cool for 12 minutes before removing them from the muffin tin. Use a plastic knife to gently run along the edges if any mini muffins feel snug.
Enjoy with ketchup or your favorite dipping sauce.
Storing
Store any leftovers in the refrigerator in an airtight container. These will last up to 2 days in the fridge and can be microwaved for 20-30 seconds or until heated throughout. Please note, the muffin texture will be soft when reheated.
You can also freeze leftovers. Thaw to enjoy and reheat in the air fryer or toasted oven until warmed.

- 8.5 oz. Jiffy Corn Muffin mix
- 1 large egg
- ⅓ cup whole milk
- 1½ tablespoons honey
- 5 hot dogs cut into fifths
Instructions
