No-Bake Pumpkin Pie Pudding Filled Bites
For everyone out there that is hoping for the fall, but experiencing that last bit of 90 degree Indian Summer heat, I feel for you. I thought this week was going to be all about mums, and pumpkin projects, but plans were stalled. I sadly still need my air conditioner, and it just doesn’t feel right to be baking. That is when I decided to make my kids some after school snacks that were quick and easy.
In comes these No-Bake Pumpkin Pie Pudding Filled Bites
They are small, bite-sized, easy to make, and yummy. Each little filo dough shell is carefully filled with a little dollop of pumpkin pie pudding, a little fresh whipped cream, and a candy corn.
Yes, the whipped cream is melting in these pictures because my windows were open. I hate having the AC on, but when you freshly whipped cream just melts in minutes, you know your home is hot.
Anyhow, to make pumpkin pie pudding you literally need a small handful of components to make Pumpkin Pie Pudding:
- Vanilla Pudding mix -1 box
- Pumpkin Pie spice
- Evaporated Milk 12 oz can
- 1 15 oz can of pumpkin
- Filo pre-baked shells *optional
- Candy corn *optional
Whip up all those easy to find ingredients, place the pudding in the fridge to chill, and you have a simple, tasty, and seasonal pumpkin dessert. I like to make things look fancier than what they are so I added some pudding and cream to a dozen of filo dough (already made) shells. These little bite-sized shells are tasty and make the perfect bite-sized snack option. They are great for parties too!
Since candy corn is everywhere right now, I added a corn or pumpkin to each and called it a day.
These No-Bake Pumpkin Pie Pudding Filled Bites didn’t even have a chance once my “starved” kids got home from school. They each ate 3 and had an extra little bowl of pudding as a special “first day of school treat”.
NO-BAKE PUMPKIN PIE PUDDING FILLED BITES
Ingredients
- 1 small box Vanilla Pudding mix
- 1 teaspoon Pumpkin Pie spice
- 12 ounce can Evaporated Milk 2%
- 15 ounces canned pumpkin
Instructions
- Mix all the ingredients together in a bowl, and chill for at least 10 or so minutes
- Fill each filo dough shell with a dollop of pudding
- Top with homemade whipped cream or whipped topping
- Add a Candy Corn or Pumpkin as a treat *optional
