A slightly sweet, spicy, and delicious sautéed ground Portuguese Chourico Sandwich recipe that uses beer, TABASCO® Sauce, and tomato paste.
When I was a kid, I always looked forward to holidays or feasts when my Vavo would make her delicious Portuguese Chourico sandwiches.
They were so scrumptious and were loved by everyone.
I grew up in Fall River, MA and lived in the same building as my Vavo (Portuguese for grandmother) and chourico (Portuguese sausage) was and still is a very prevalent food. My Vavo and mother often cooked with it and added it to soups, baked casseroles, and more.
I love this Chourico Sandwich recipe because it not only tastes so good, but it also reminds me of my Father.
One of my Father’s favorite ways to enjoy his chourico was with TABASCO® Sauce. In fact, he added TABASCO® Sauce to just about ALL his meals to enhance the flavors of them. Between that and his favorite Portuguese Olive Oil, my Mom always had to have these two condiments well-stocked for him.

These Portuguese Chourico Sandwiches are one example of a recipe where you can include TABASCO® Sauce in the recipe, and on the sandwich for an extra kick!
For these Chourico Sandwiches, I purchase already ground chourico, but it still needs to be ground up a but finer in a food processor.
The beauty of this sandwich is that the filling is almost like a sloppy joe consistency.
It goes so well with mini papo secos (Portuguese Buns), but if you cannot find these salad rolls work well too!

Best Portuguese Chourico Sandwiches Ever (Family Recipe)
Ingredients
- 2 1/2 lbs. Ground Chourico You can ground links yourself in food processor
- 1 stick salted butter
- 5 cloves garlic minced
- 1 small sweet onion finely diced
- 8 ounces beer
- 6 ounces tomato paste
- 1 tsp TABASCO Sauce * can add more if you like spice
- 18 Mini Papo seco rolls (Portuguese Buns)
Instructions
- In a food processor, grind the chourico up a little more to make it finer
- In a medium stock pot, saute butter, garlic, and onion over medium heat. Cook for about 3 minutes.
- Add chourico to the pan, with the beer, tomato paste, and TABASCO.
- Saute chourico over medium heat and the bring to a simmer.
- Cook for about 15 minutes until alcohol has burned off.
- Serve chourico in mini Portuguese Rolls. If making for a party, allow chourico to fully cool before wrapping each one.

Funny I just made chourico and peppers ( I mean it’s on the stove simmering) and I live in South Carolina but grew up in Bristol and I am going to Portugal next month (my grandparents were from Sao Miguel and emigrated to Fall River). I was trying to find the best chourico in Lisbon via Google and came upon this recipe. It’s similar to what I do but I add a pinch of cinnamon (and I mean just a pinch for a big pot) which is the way I was taught. The worst part is finding decent bread down here but at least they sells Gaspar’s chourico but it’s $8.99 a pound OMG!!

We also lived in Fall River and then Attleboro. Since I have retired I have been looking for new recipes We now live in South Carolina. Tried this sandwich. and loved it. What I would love is the recipe for the Portuguese blade steak sandwich that they sold at the Portuguese festivals and street fairs. Do you happen to have that to share with me?

Sorry, I never had it! My go-to chourico and chips is to deep fry the fries *real potatoes, and pan-fry the chourico. The spices are a little hot sauce, onion, garlic, and paprika. Toast the Portuguese long-style bun with butter and then stuff. Not the healthiest, but darn good!!
