Quick & Flavorful Riced Butternut Squash with Bacon & Onion

Lately, my husband and I have been taking “eat your veggies” to heart. After we purchased our new home last year we kind of fell into a whirlwind of convenience foods. But, not the good kind of convenience foods like Green Giant Riced Veggies–think pizza, fries, and chicken wings.
Everything, and anything that provided very little nutritional value. We pretty much ate horribly, and we were starting to feel really sick. Thankfully, we started to change and incorporate more veggies into our lifestyle.
I am on the keto diet and my husband who doesn’t need to shed any additional pounds is committed to eating more wholesome. While I still have no issue making pizza, or cupcakes for my kids occasionally, I am doing really well avoiding them.
The first thing I noticed when I started to eat more wholesome foods was that it can be a huge time commitment to prep veggies. We eat lots of salads and fresh green vegetables but between work and the gym, I don’t always have time to peel and dice things like butternut squash for my family.
In fact, I LOVE butternut squash so much! The only thing I do not love is peeling, or preparing it! It is probably one of the most time-consuming things ever! Plus, I might have almost chopped a finger off due to a dull knife last year….yikes!!
Thankfully, Green Giant has solved this issue for many! Their latest line of Green Giant Riced Veggies makes preparing wholesome meals or sides with veggies a breeze!! What are Riced Vegetables?
In case you were not familiar, riced veggies are vegetables that are shredded into small “rice-like” pieces. This makes them easy to be incorporated into baked goods, or used as a substitute for actual rice which is carb heavy and lacking in nutrition.
They are gluten-free, and contain 85% fewer calories than white rice! Plus, they have no spice or sauce so the possibilities of preparation are endless!
Today, I decided that I wanted to make a side dish that is perfect for the harvest season. I am so over this hot, humid, and dreary summer and welcome the cooler fall. This Riced Butternut Squash with Bacon & Onion would make an amazing side dish this fall.
I love this recipe so much because A. It is so easy, peasy, and B. Bacon and Butternut Squash pair together so well. I can see myself making this for Thanksgiving too!
I know I am so jumping the calendar here, but I just love the fall season.

Riced Butternut Squash with Bacon and Onion
Ingredients
- 1 bag Green Giant Veggies Riced Butternut Squash
- 1 small vidalia onion chopped
- 4 slices bacon chopped into small pieces.
- 1/4 tsp salt, pepper, cinnamon to taste
- 1 tablespoon butter
Instructions
- Prepare squash according to the package instructions and drain.In a medium sized skillet (over medium heat), add the butter, bacon pieces and onion.Pan fry for about 3 minutes, and then add in the squash.Add spices, and saute for an additional 2 minutes until bacon is crisp, squash is tender, and flavors have melded.
Enjoy warm!
