Summer is all about the fresh produce. One of the most abundant vegetables in our garden happens to be tomatoes and cucumber. We have a ton, so being creative in the kitchen is key to keeping up with our abundant harvest.
Cucumber salsa happens to be an excellent recipe for using fresh produce. It makes a light and fresh summer meal or snack idea. Paired with some crackers and you really have a flavorful treat.
Ingredients in Cucumber Salsa
- 2 cups of chopped cucumber
- 1 jalapeno seeded, and diced (wear gloves to prevent irritation)
- 3 tablespoons of chopped red onion
- 2 medium tomatoes seeded, and chopped
- 2 tablespoons of chopped cilantro
- 1 tablespoon chopped mint
- 1/2 cup sour cream
- 3 tablespoons lemon juice
- 1/4 tsp seasoned salt
- 1/4 tsp black pepper
- 1 tsp cumin
- 1/4 tsp paprika
How to Make Cucumber Salsa
Making cucumber salsa involves a few steps, but is mostly prep work. You can prepare all your herbs and veggies ahead of time and mix them up. Store them in an airtight container until you are ready to whisk the dressing.
For the light and tangy dressing, simply add sour cream, lemon juice, and spices to a small bowl, and whisk until creamy.
Add the dressing to the veggies, and allow flavors to meld for at least 1 hour.

Tangy Cucumber Salsa
Ingredients
- 2 cups cucumber chopped
- 1 jalapeno seeded, diced (wear gloves)
- 3 tbsps red onion chopped
- 3/4 cup tomato diced, seeded
- 2 tbsps cilantro chopped
- 1 tbsp mint chopped
- 1/2 cup sour cream

Instructions
- Prepare all your veggies.
- Add them to a large size bowl.
- In a smaller bowl, whisk lemon juice and spices with the sour cream.
- Add mixture to the veggies and stir until all pieces are coated.
- Cover bowl and place in the fridge for at least 1 hour for flavors to meld (for best taste).
- Serve with Nut-Thins or your favorite cracker.

I’m not sure which I’m more excited about – the salsa or the crackers. I can tell you this much – I went to my grocery store’s website and looked to see if they sell these crackers in Canada (they do!!!) and to order them and the ingredients for the salsa. YUM!
