Cheesy Broccoli Casserole Recipe

Equipment

  • 11" x 13" casserole dish
  • skillet
  • 4 (or bigger) quart stock pot
  • steaming basket
  • cutting board

Ingredients

  • 1 medium yellow onion diced
  • 5 cups fresh broccoli florets
  • 10.75 ounces cream of celery soup
  • 2 cups shredded cheddar cheese
  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • 2 large eggs beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 ½ teaspoons lemon juice
  • 30 whole RITZ crackers crushed
  • 3 tablespoons unsalted butter melted

Instructions

  • Place broccoli florets in a steamer basket, set aside. Add enough water to fill one inch of the bottom of your stock pot. Once boiling, add steamer basket of broccoli and cover pan. Steam for 5 minutes, drain excess water.
  • Add broccoli to a greased casserole dish.
  • Preheat oven to 350° F.
  • In a skillet, add 1 tablespoon of oil and saute onion until translucent.
  • In a large bowl, mix onion, broccoli, soup, mayo, sour cream, spices, eggs, 1 cup of cheddar and lemon juice.
  • Pour mixture over the broccoli and mix. Add crushed RITZ Crackers, and cheddar.
  • Covered casserole dish with foil and bake for 30 mins.
  • Remove foil after 30 minutes of baking and then bake for an additional 15 minutes uncovered.
  • Remove from oven and serve warm.

Tip- Refresh the topping with new crackers (original topping will get soggy).
