Three Ingredient Lemon Cake Mix Bars

These sweet and tangy lemon bars come together easily. All you need is a yellow cake mix, butter, and canned lemon pie filling to make these delicious lemon squares.

Equipment

  • 9 x 11 baking dish
  • parchment paper *optional
  • nonstick spray
  • large mixing bowl
  • pastry cutter
  • rubber spatula
  • oven adjusted to the center rack position

Ingredients

  • 15.25 ounces yellow cake mix
  • 21 ounces lemon pie filling
  • ½ cup salted butter softened

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
    Grease a 9 x 11 baking pan, or line it with parchment paper, and grease the paper.
  • In a large bowl, combine cake mix, and melted butter. Using a pastry cutter, work the dough until it is thick, and moist.
    15.25 ounces yellow cake mix, ½ cup salted butter
  • Press half the buttery crust dough into the greased pan. Bake for 10 minutes.
  • Remove crust from the oven, and carefully spread the lemon filling over the warm crust.
    21 ounces lemon pie filling
  • Sprinkle remaining buttery crust dough over the lemon filling layer.
  • Bake for 25 minutes and then remove from oven to cool.
  • Allow bars to cool for at least one hour before slicing them into squares.
