Making Lemon Bars with Cake Mix And Lemon Pie Filling
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9 x 11 baking pan, or line it with parchment paper, and grease the paper.
In a large bowl, combine cake mix, and melted butter. Using a pastry cutter, work the dough until it is thick and moist.
Press half the buttery crust dough into the greased pan. Bake it in the oven for 10 minutes.
Remove crust from the oven, and carefully spread the lemon filling over the warm crust.
Sprinkle the remaining buttery crust dough over the lemon filling layer.
Bake in the oven for 25 minutes and then remove from the oven to cool.
Allow bars to cool for at least one hour before slicing them into squares.
Storing
Lemon cake mix bars can be stored in an airtight container at room temperature for up to 3 days.
If you want to keep them longer, you can store them in the refrigerator for up to one week. You can also freeze them by individually wrapping them and storing them in an airtight, freezer-safe container.
