Split Pea Soup with Spiral Ham

Ingredients

  • 3 tablespoons avocado oil *can use your preferred oil
  • 3 cups cooked spiral ham chopped
  • 2 large sweet onions diced
  • 4 ribs celery chopped
  • 3 large carrots peeled and diced
  • 6 cloves garlic minced
  • 1 pound dry split peas rinsed, remove any debris
  • 2 whole bay leaves
  • 5 sprigs fresh thyme removed from sprig
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 10 cups chicken broth
  • cups water

Instructions

  • In a large pot, sauté the chopped ham, onion, carrots, andcelery in the avocado oil until vegetables are softened. Add the garlic andcook for 30 seconds more.
  • Add the rinsed, split peas to the pot.
  • Add the broth, bay leaves, thyme, pepper, and salt to the pot.
  • Bring the soup to a boil, then reduce heat and simmer, covered, for 90 minutes, or until the peas are tender and the soup has thickened. Stir occasionally.
  • Add 1½ cups of water to the thickened soup.
  • Remove the bay leaves and season with additional salt and pepper to taste. Serve soup warm.
