Equipment
Large Baking Sheet
parchment paper
microwave-safe bowl
rubber spatula
measuring cup
Ingredients
9cupsrice cereal sqaures
12ounceswhite almond barkmelted
2cupspowdered sugar
3ouncesstrawberry gelatin pouch
1ouncefreeze dried strawberries
1cupmini marshmallows
1cupwhite chocolate chips
Instructions
Line a large rimmed baking sheet with parchment paper or a reusable silicone mat. This prevents sticking and makes cleanup a breeze.
In a large microwave-safe bowl, melt the white confectionery coating in 30-second intervals. Stir well between each heat cycle until the liquid is completely smooth.
Add the cereal to the parchment-lined baking sheet.
Drizzle the melted mixture over the cereal and use a large spatula to fold everything together. Work gently so you don't crush the cereal, but make sure every piece is fully "wet" and coated.
While the coating is still tacky, sprinkle the dry gelatin powder, and powdered sugar over the cereal. Toss again until the mixture transforms into a beautiful, even pink.
Gently fold in the mini marshmallows, white chocolate chips, and freeze-dried strawberries.
Allow the mixture to harden for about 15 minutes before enjoying.
Store leftovers in airtight containers or bags for up to one week.
