Traditional Brazilian Potato Salad (Salada de Maionese)

A traditional, creamy side dish made with tender diced potatoes, steamed mixed vegetables (carrots, peas, and corn), and fresh parsley, all bound together in a tangy dressing made of mayonnaise, Dijon mustard, and apple cider vinegar.

Ingredients

  • 3 pounds Russet potatoes peeled and diced
  • 1 bag Frozen mixed vegetables (carrots, peas, corn) steamed and cooled
  • cups Mayonnaise (use 1 cup for a less creamy version)
  • 2 tablespoons Apple cider vinegar (divided)
  • 1 tablespoon Dijon mustard
  • ¼ cup Fresh parsley finely chopped
  • Salt and freshly ground black pepper to taste

Instructions

  • Place the peeled and diced Russet potatoes in a large pot of salted water. Bring to a boil and cook until just tender when pierced with a fork (about 10–12 minutes). Be careful not to overcook them so they don't turn to mush.
  • Drain the potatoes thoroughly. While they are still warm, gently toss them with 1 tablespoon of apple cider vinegar and a pinch of salt. Let them cool completely.
  • Microwave/steam the frozen mixed vegetables until tender-crisp. Immediately rinse them under cold water to stop the cooking process and cool them down, then pat dry.
  • In a large bowl, add the potatoes, mayo, vegetables, remaining vinegar, mustard, salt, and pepper; combine with a wooden spoon
  • Taste and adjust seasoning if needed. Cover and refrigerate for at least 1 hour before serving to let the flavors meld.
