A creamy and savory blend of Italian Sausage, sweet onions, garlic, peppers, and spices are combined with cream cheese and stuffed into white mushrooms. Finished in the air fryer, these bite-sized appetizers make a delicious lower-carb snack.

These Air Fryer Sausage Stuffed Mushrooms are an excellent choice if you’re looking for a make/prep ahead appetizer for a party, charcuterie board, or to enjoy. They can be made earlier in the day by assembling the filling and prepping the mushrooms.
I fell in love with stuffed mushrooms years ago when I made these Low-Carb Cheese Stuffed Mushrooms. That prompted me to start experimenting with different mushroom flavors, and then I created these Chourico and Cheese Stuffed Mushrooms which were a complete hit–speaking of, I need to make those again! The beauty of stuffing mushrooms is that you can cater the fillings to what you might have on hand or flavors your family loves.

Best Mushrooms for Stuffing
Mushrooms are like little edible cups, ready to be filled with deliciousness. Here are my top three favorite varieties to stuff.
Portobello: These are my go-to mushrooms for making a meal out of stuffed mushrooms. They are large and have plenty of room to fill. They are also tasty grilled or used as a plant-based burger patty.
Cremini: These little brown mushrooms are like smaller versions of the portobello. They have a mild flavor and are versatile. Fill them with your favorite fillings and bake or air fry for a tasty snack or appetizer.
White Button: This variety of mushrooms is the most common to be stuffed and is what we used in this recipe. They are the same size as cremini mushrooms but have a sweeter taste. We love using these because they are normally the least expensive and are versatile for many recipes.
Prepping White Mushrooms
Gently remove any excess dirt with a damp paper towel. You don’t want to soak these in water because they will absorb water like a sponge and become soggy.
Remove stems by gently gripping them and popping them out. You can save the stems, compost them, or feed them to your chickens. Set your mushrooms on your air fryer tray so they are ready to be stuffed. If you are preparing these ahead of time, store prepped mushrooms in an airtight container in the fridge.
Air Fryer Sausage Stuffed Mushrooms Ingredients
Mushrooms – I used white mushrooms which have an earthy, sweeter flavor. They are super versatile, but you can also use cremini (brown) mushrooms. I gently removed the stems which popped out easily. I fed them to my chickens but you can also chop them up finely to use in the filling.
Sausage – I used a 16-ounce roll of Jimmy Dean Italian Sausage which I pan-fried.
Vegetables – Green pepper, onion, and fresh garlic were used to create a tasty flavor.
Cheeses – Both freshly grated parmesan and cream cheese were used to create this creamy, delicious stuffing.
Spices – Paprika, onion powder, garlic powder, ground black pepper, and salt were used to season the filling.
Herbs – Fresh parsley was used as a garnish, and can also be used in the filling.

Making Sausage Stuffed Mushrooms
Preheat your oven to 400°F (200°C). Wipe clean the mushrooms with a damp paper towel and remove the stems. You can discard the stems or chop them finely and add them to the filling. Since I only wanted to make 20-24 mushrooms I gave my chickens the stems.
Heat the butter in a large skillet over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through. Drain any excess grease. Add the chopped onion and cook for 5-7 minutes or until softened and translucent. Stir in the minced garlic and cook for another minute, until fragrant. Season with black pepper, salt, and paprika.
Remove the skillet from the heat and stir in the softened cream cheese and grated Parmesan cheese until well combined.
Using a cookie scoop or tablespoon, add the sausage mixture evenly among the mushroom caps.
Place the stuffed mushrooms on your air fryer tray. Cook for 8-12 minutes at 400 °F (200°C) or until mushroom tops are golden-brown, and mushrooms feel tender.

Additionally, you can add these to a baking sheet lined with parchment paper. Bake them for 15-20 minutes, or until the mushrooms are tender and the filling is bubbly and golden brown.

Storing Leftover Mushrooms
These store well in the refrigerator in an airtight container for up to 5 days. To reheat, place mushrooms on a microwave-safe dish and heat throughout. Additionally, you can also use the air fryer to heat these until warmed throughout and crisp on top.
