In this post, I’ll show you how to make Blueberry Turnovers. I used an air fryer in this recipe, but you can use a conventional oven if you prefer. Both methods produce easy turnovers with a flaky golden shell. These Blueberry Turnovers are made with puff pastry dough and fresh or frozen blueberries. This post is sponsored by B&G Foods. What is a Turnover
A turnover is a hand-held food that’s made of pastry dough filled with something like fruit, meat, or vegetables. The pastry dough is filled and folded over before baking it to a golden flaky finish. Turnovers are a versatile food. Depending on the filling, they can make a delicious breakfast, lunch, or dessert.

What You’ll Need for Blueberry Turnovers
I like my recipes as quick and easy as possible, and this recipe is just that! For the pastry dough, we use pre-made puff pastry dough purchased from the supermarket. Since blueberries are not in season at the time of making this recipe, I used frozen, wild blueberries. However, you can use fresh or frozen blueberries depending on what’s available to you. Other than that, you’ll need cornstarch, Spice Islands® Pure Lemon Extract, granulated sugar, an egg (for the egg wash), water, and a Spice Islands® Cinnamon Sticks.
The glaze is made with powdered sugar, Spice Islands® Pure Vanilla Extract, and milk.
How to Make Them

The first step in this recipe is making the blueberry filling on the stovetop. Over medium-high heat, add the cornstarch, and sugar to a small saucepan and whisk. Add in the blueberries, water, Spice Islands Cinnamon Sticks, Spice Islands Pure Lemon Extract, and water. Bring the mixture to a boil, and continue to stir for 3-5 minutes, or until the mixture begins to thicken. Allow filling to cool before using. This recipe makes double the filling you need. Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Once filling is cooled, layout thawed sheets of puff pastry dough on a flat surface. Cut the sheet into 3 rectangles and make 9 squares from each.

Brush on the egg wash along the edges of the inside of the pasty. Add 1/2 tablespoon of filling to each and wrap over the edges to form a triangle shape. Crimp edges with a fork and lightly brush the top with the egg wash.
Cooking Turnovers in an Air Fryer
We cooked our blueberry turnovers in our air fryer oven. Air fryers cook food much faster than conventional ovens. Therefore, you need to pay close attention to your turnovers as they’re cooking in the air fryer.

Set the air fryer to 320°F and cook the turnovers for 7 – 10 minutes until their tops are golden brown in color. As mentioned above, air fryers cook food fast. Plus, different air fryer models vary in cook times, so it’s highly recommended that you start checking your blueberry turnovers after they reach the 5-minute mark. They will be puffy, golden brown, and flaky in appearance. If they feel soft continue to cook them checking them every minute.
Cooking Turnovers in a Conventional Oven
Although we used an air fryer to cook our blueberry turnovers, you can just as well use a standard conventional oven. All of the steps are the same, but instead of using the cook temperature and time in the air fryer section, you’ll bake them at 425°F for 12-15 minutes on a parchment-lined baking sheet.

Make the Glaze
When your blueberry turnovers are baking, it’s a perfect time to make the glaze. This is done by combining the confectioners’ sugar, Spice Islands Pure Vanilla Extract, and milk together in a bowl. Just whisk it together until it fully combines into a smooth, thick glaze. I used 2 cups of powdered sugar, 1/2 teaspoon of pure vanilla extract and 4 tablespoons of milk. You want the glaze, so it sets nicely once you dip each turnover in it.

Drizzle the Glaze onto the Blueberry Turnovers
Once the turnovers are fully baked, remove them from the oven and dip each turnover into the prepared glaze while still warm. This lets the glaze spread across the flaky pastry shell and drip down the sides (yum)!

Storage
These puff pastry desserts are the best on day one, but they do stay good in an airtight container for up to 24 hours. I do recommend that you freeze these before icing and store them in a freezer-safe container or bag for the best texture/taste for up to 30 days. To enjoy, thaw in the fridge, and pop them in the oven or air fryer to crisp them up for a minute or two!
