This lemonade glaze recipe is for lemon lovers who enjoy a zesty lemon flavor! It’s not a lemon cake recipe, but instead it’s a trick for an effective lemon flavor upgrade. All you need is a boxed lemon or vanilla cake mix and lemonade drink mix, like Crystal Light. Also, I’ll show you how to upgrade your boxed cake mix for more lemony flavor!
Ingredients:
- Lemon Boxed Cake Mix
- Crystal Light Lemonade Mix (regular) – 2 tsp divided
- Confectioners Sugar – 1 + 1/2 cups
- Whole Milk – 1-1/2 tbsp (a bit more if needed)
Directions:
- Prepare your lemon cake mix according to the box instructions.
- Add an additional 1 teaspoon of Crystal Light Lemonade powder to the batter.
- Bake according to the box instructions. Mine took 28 minutes. I suggest checking your cake on the lower end of the time scale.
- After the cake is completely cooled, remove it from the bundt pan, and set it on a slotted cooling rack for icing. The rack will allow excess icing to drip off.
- For the lemonade cake glaze, mix the confectioners sugar, 1 teaspoon of Crystal Light Lemonade Powder, and the 1-1/2 tablespoons of milk.
- Mix until creamy. If you’d like a thinner glaze add another tablespoon to thin it up.
- Drizzle over the top of the cooled bundt cake and enjoy it!
