The cool crisp air of fall gets me super excited to bake! I am all about the apple, pumpkin, and maple desserts this time of year. Baking is one of them pastimes that helps me to destress when things get tense. Oddly enough, when I feel overwhelmed, heading into my kitchen relaxes me. Ever since I made that Chocolate Frosted Cake made of mayo this past summer, I have been adding mayo to my cake batters. But, it is not just any mayonnaise. My family only love Hellmann’s mayo because of the creamy, quality taste. Yes, I have created 4 mayo snobs who can spot cheap mayonnaise a mile away!
While admittedly, we typically use traditional Hellmann’s Mayonnaise, we have been trying to clean things up a bit in our diet (when we can) so we recently tried Hellman’s Organic Mayo.

Actually, we have two local Whole Foods stores in Rhode Island–total score! I LOVE everything about Whole Foods and could shop there daily! They have the best-prepared foods, and a variety of clean, wholesome, and healthy foods, and products. It is truly no wonder why the parking lot & store are always full!
While shopping at Whole Foods, I not only picked up the Hellmann’s Organic Mayonnaise, but I also some organic eggs, apples, flour, and a few other baking staples to replenish my baking pantry. I have been known to go through a bag of flour a week during the baking season and lots of eggs so having wholesome, clean options on hand is a must!

Organic Apple Spice Crumb Cake
Ingredients
- 3 cups organic flour
- 2 cups organic white sugar
- 1 tablespoon baking powder
- 1/2 tsp salt
- 1 tsp apple pie spice
- 1/4 tsp baking soda
- 4 large organic eggs slightly beaten
- 1 1/4 cups Organic Hellmann’s Mayonnaise
- 1 tsp vanilla extract
- 1 large Granny Smith apple peeled, cored, diced
Crumble Topping
- 1 cup organic flour
- 3/4 cup white sugar
- 1/2 tsp cinnamon
- 1/2 cup Organic Hellmann’s Mayonnaise
Instructions
- Preheat oven to 350°. Grease 13 x 9-inch baking pan, set aside.2. In large bowl, combine dry cake ingredients, set aside. 3. In medium bowl, whisk eggs, Hellmann’s, and extract. 4. Toss apples with flour mixture, and stir in mayo mixture. Combine evenly.5. Add batter to greased baking dish. 6. For Crumb Topping,combine all ingredients with clean hands, and gently squeeze mixture to crumbs. 7. Bake 50-55 minutes or until toothpick inserted in center comes out clean and crumbs are golden. 8. Allow cake to cool before cutting. Enjoy!
