Equipment

  • cutting board & knife
  • deep-walled cutting board
  • oven

Ingredients

  • 12 ounces hot Italian sausage ground
  • 3 green bell pepper washed, dried, halved, seeded
  • 1 yellow onion small, diced
  • ½ cup white mushrooms chopped
  • 1 cup marinara low-sugar variety only
  • ¼ cup shredded cheddar
  • 3 tbsps Parmesan cheese

Instructions

  • Preheat your oven to 350°F (175°C). Wash, dry, and cut your bell peppers in half lengthwise, removing all seeds and membranes. Arrange the pepper halves snugly in a deep-walled casserole dish.
  • In a large skillet over medium-high heat, combine the ground sausage, diced onion, and chopped mushrooms. Cook until the sausage is thoroughly browned (about 6 to 8 minutes).
  • Drain any excess grease from the skillet. Pour in the low-sugar marinara sauce and stir well with a wooden spoon to combine all the ingredients into a thick, hearty meat sauce.
  • Scoop an even amount of the warm sausage mixture into each pepper half. (This recipe is measured to perfectly fill 6 pepper halves).
  • Place the casserole dish in the oven and bake uncovered for 20 minutes at 350°F.
  • Remove the pan from the oven and evenly top the peppers with the shredded cheddar and Parmesan cheeses.
  • Return the dish to the oven and bake for an additional 10 minutes (for firmer peppers) or up to 30 minutes (for softer peppers). Note: If you prefer very soft peppers and choose a longer bake time, hold off on adding the cheese until the final 10 minutes of baking to keep it creamy and prevent burning.
  • Let cool slightly, and enjoy warm!
