Pumpkin Bread made with yogurt is one of my favorite fall dessert or snack recipes. This recipe produces a very moist pumpkin bread thanks to the addition of vanilla yogurt. I used a lower calorie version and it worked perfectly to get a tasty pumpkin bread with a crispy outer, and moist inner.
Now that fall is right around the corner, my oven will be firing up to make some delicious seasonal treats like pumpkin cheesecake, apple pie, pumpkin bombs, and this lovely Pumpkin spice Loaf.
Parchment Lined Bread Loaf Pan
If you are like me, and have trouble getting baked breads out of their loaf pans, then using parchment paper in your loaf pan is a blessing! Here are some of my favorite reasons to line your bread loaf pan with parchment paper:
- Less oil/fat used (nonstick agent)
- Less cleanup
- Easy to take the loaf out (no sticking)
- Easy to slice through the loaf once cooled
Adding Yogurt for a Moist Bread

By adding yogurt (Greek, lowfat, or nonfat in vanilla) you get the benefits of extra goodness and a moister loaf!
Adding Nuts & Chocolate Chips to Pumpkin Bread
This pumpkin loaf is delicious itself or with add-ins like nuts or chocolate. You can use almost any type of nut, raisins, or chocolate chips to add more fun & flavor.
Ingredients Needed to Make Pumpkin Bread
- 2 cups all-purpose flour
- 1 1/2 cups white sugar
- 1 tbsp pumpkin spice
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup canned pumpkin
- 2 Eggs
- 5.3 ounces vanilla yogurt We used Dannon Two Good, Vanilla
- 1/4 cup vegetable oil
- 2 tsps vanilla extract

Pumpkin Bread Made with Yogurt
Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups white sugar
- 1 tbsps pumpkin spice
- 1 tsp baking soda
- 1 tsp baking powder
- 2 eggs large
- 1 cup canned pumpkin
- 5.3 ounces vanilla yogurt We used Dannon Two Good, Vanilla
- 1/4 cup vegetable oil
- 2 tsps vanilla extract
Instructions
- Preheat oven to 350 degrees fahrenheit.
- Line a loaf pan with parchment paper.
- Add all the dry ingredients into a large bowl and whisk.
- In a smaller bowl, add the wet ingredients and combine.
- Pour the wet ingredients into the dry, and mix well with a hand mixer.
- Bake for 60 minutes or until fully cooked. The toothpick method (inserted into the middle of the bread) is the best test to see if it is fully cooked.
- Allow to cool for one hour before slicing into it.
