Pumpkin Truffles are a delicious, bite-sized dessert that everyone loves. A rich and creamy pumpkin filling is nestled inside a semi-sweet chocolate outer layer.
This easy dessert recipe can be made ahead of time too making it a great choice for parties, and potlucks.

A few years ago, my neighbor shared a pumpkin truffle with me and it was really tasty… for anyone that love graham crackers. The graham cracker taste was very prominent and secretly, I do not like grahams in my pie crusts or recipes.

So, I decided to use golden creme sandwiches cookies for this batch. I have made no-bake truffles many times in the past so I have the basics of the recipe down pat.
The combination of the vanilla cookies, cream cheese, pumpkin spice, and pureed pumpkin all worked together so well for a subtle pumpkin flavor that is not at all overpowering.

Ingredients Needed for Pumpkin Truffles
- 1 12 ounce bag of semi-sweet chocolate chips
- 1/2 cup of pumpkin puree
- 1 tsp pumpkin spice
- 6 ounces of cream cheese
- 14-15 ounce package of golden sandwich creme cookies
How to Make Pumpkin Truffle Filling
Making the filling is easy, and I will tell you that your clean hands will be your best tool. If you loved the days of playing with squishy, squashy things as a kid, get ready for this recipe!
Food grade plastic gloves would be helpful since the batter is sticky!

Best Way to Grind Cookies
Adding your cookies to a food processor and pulsing for 3-5 times is all your need for finely ground crumbs. You want them to be the consistency of brown sugar.

Then remove the crumbs and add them to a large mixing bowl. Reserve 1 tbsp worth for topping truffles later.
Add the canned pumpkin, spice, and cream cheese.
A lot of recipes say use softened cream cheese but I say don’t! The colder, the better!
You will be working the mixture thoroughly with your hands until combined.

Do I Need to Chill the Truffle Filling?
Yes, after you have cleaned your hands, and work area, place the truffle filling in the freezer for at least 30 minutes. This will help you form nicely rounded balls.

How to Form Truffle Balls
Once your truffle filling is chilled, line a small baking sheet with parchment to provide a space for your truffles to chill once again and be ready for dipping.

Using clean hands, form balls into 1 inch- 1 1/2 inch size. I didn’t have a precise measuring system and this recipe made 15 truffles.
Once truffles are formed, place baking tray in the freezer for 30 minutes.

How to Melt Chocolate in the Microwave
There are some key tips to keep in mind when melting chocolate in the microwave.
- Use a microwave safe, deep glass bowl that is 50% large than the amount of chocolate in the bowl. You do not want the chocolate chips touching the top.
- Reduce microwave power to 50% and place the glass bowl with chocolate chips into the microwave.
- Heat chocolate in 30-second intervals with one stir in-between each. Use a metal spoon to stir. By the 3rd 30-second interval, the chocolate will be creamy.
- Remove from heat and place on a trivet on the counter. If chocolate starts to cool, an additional quick heat for 20 seconds should help to make it creamy again.
How to Dip Truffles
To dip truffles, make sure they are cold & hard. this will allow them to not fall apart when dipped in the warm chocolate.
Use a spoon to dip and transfer to a fork to remove excess chocolate before adding to a parchment lined sheet.
After all chocolate is dipped, sprinkle with crushed cookie crumbs, and put them in the fridge for at least 30 minutes to harden.

Can you Freeze Truffles?
Truffles stay good in the fridge for a tested full week when wrapped in an airtight container or packaging.

You can also freeze them for up to 3 months. Place them in an airtight freezer bag or use a food storage sealer to package.

To defrost, place them in the fridge for about 2 hours.
