15 Minute Easy Shrimp Guacamole Cups (So Yummy)
With the New Year, I am excited to be preparing more nutritious recipes for my family. Rather than pan-fry things like shrimp, I have started cooking many of our meals with corn or olive oil.
Did you know that? That really made my day because I grew up using Mazola® Corn Oil and prefer to cook with it.
When it comes to eating better for us meals, my kids are slightly picky. I admit, it has been a challenge to get them fully on-board when it comes to eating nutritious meals.
If a meal does not look colorful or fun they tend to snub it which is quite frustrating. That is why I have to put my thinking cap on to make meals that contain wholesome foods presented in a fun way.
These kid-approved, 15 Minute Easy Yummy Shrimp Guacamole Cups meet the mark on tastiness and presentation. They also make a creative and easy appetizer option to serve at parties.
For today’s recipe, I used Mazola® Corn Oil which is made of 100% pure oil with no additives, and is cholesterol free. I love that it is a neutral tasting oil so that the great flavor of your food comes through.
In the past, I’ve pan-fried my shrimp with butter. For this recipe, baking the shrimp with corn oil was a great decision! It tasted great and helped me to stay on top of my New Year’s goals.
Baking shrimp tossed in corn oil produced tender, flavor shrimp that really complement these guacamole-filled cups.
Truth be told, I love lots of lime juice and cilantro in my guacamole, but my picky kids do not. They prefer just a little onion, and that is it!
I was a little hesitant to try this basic combination but I think the flakiness of the cups and the spice of the shrimp balance everything out.
I also use Greek Yogurt instead of sour cream in these cups. I do not know about you, but I cannot even tell the difference!
Rather than load up on a creamy cottage or cream cheese blend that I would normally use in my cups, I opted for guacamole instead. This adds more nutrients and lots of taste which complements the cups.
This recipe is perfect as an appetizer, or alongside some rice or a salad for a main dish. It’s a fun and tasty way for both kids and adults to eat more wholesome foods.

Shrimp Guacamole Cups (Easy 15 Minute Recipe)
Ingredients
- 1 lb Organic Medium Shrimp leave tails on
- 2 tablespoons Mazola ® Corn Oil
- 1/4 tsp each of garlic powder, onion powder, cayenne pepper, minced onion
- 1 tablespoon red onion diced
- 8 cherry tomatoes sliced
- 2 tablespoons Greek Yogurt plain
- 1 pitted Avocado remove pit, skins
- 1 15 count package of phyllo dough cups
Instructions
- Toss shrimp with corn oil and spices.
- Bake in a 350 oven for 5 minutes.
- In a medium bowl smash avocado with the onion. You can add cilantro/lime juice if you like it as well!
- Fill cups with guacamole, and then add one slice of tomato to each.
- Add Greek Yogurt to a piping bag and pipe a small amount to each cup.
- Top with one cooked shrimp. Enjoy immediately.
