Cherry Brownie Truffle Ingredients
Fudge Brownies – You can use any premade brownies you prefer- as long as you have 6 large-size brownies. I used Cheryl’s Brownies because I always have them around. You can use day old brownies you may have baked at home as well.
Frosting – I used 1/2 cup of vanilla buttercream frosting.
Cherries – You will need 18 maraschino cherries patted dry.
Chocolate – I used one pound (16 ounces) of Ghirardelli White Chocolate melts. I also used 6 ounces of milk chocolate chips for the swizzle on these truffles.
Sanding Sugar – For decoration- you can omit if you’d like or use another type of sprinkle.
How to Make Cherry Brownie Truffles
In a food processor, add crumbled fudge brownies and buttercream frosting. Blend until dough consistency. The dough should not be sticky.
Form 2 tablespoon-sized brownie balls until you have 18 total.
Gently depress each ball and add a cherry; cover up the cherry with the brownie dough.
Freeze for one hour.
Remove from the freezer and allow them to sit at room temperature for 30 minutes. Melt the white chocolate melts in batches. This will prevent extreme temperature changes which will crack the chocolate once the hot and cold come together.
Dip each brownie truffle into the chocolate and set it on a parchment-lined baking sheet.
Melt milk chocolate and add it to a plastic piping bag. Pipe swizzles on each truffle.
Sprinkle with sanding sugar and enjoy!
Recipe Tips
- If you don’t have a double boiler, you can melt the chocolate coating in a microwave-safe bowl in 30-second intervals, stirring in between, until melted.
- Be careful not to overmix the brownie mixture. Overmixing will make the brownie balls tough sticky and loose.
- Dip the brownie truffle balls in the melted chocolate while they are still cold. This will help the chocolate to set quickly.
- Garnish the brownie balls with sprinkles, chopped nuts, or other toppings before the chocolate sets.
- Alternate chocolate flavors for the coating/swizzle.
- Refrigerate the brownie balls for at least 30 minutes before serving. This will help the chocolate/toppings to set completely.
Recipe Variations
- Add chopped nuts, chocolate chips, or other ingredients to the brownie mixture.
- Use different types of frosting to make different flavors of brownie balls.
- Dip the brownie truffles in different types of melted chocolate.
- Roll the brownie truffles in different types of toppings, such as sprinkles, chopped nuts, or coconut.
How to Store Cherry Brownie Truffles
Chocolate Covered Cherry Brownie Truffles can be stored in an airtight container in the refrigerator for up to 1 week. You can also freeze them for up to 3 months, but they may become a bit harder when thawed.
- Place them in an airtight container to prevent them from drying out.
- If you are storing them in the refrigerator, place them on a baking sheet lined with parchment paper to prevent them from sticking to the container.
- If you are storing them in the freezer, wrap them individually in plastic wrap before placing them in an airtight container.
When you are ready to serve, let the Chocolate Covered Cherry Brownie Truffles thaw at room temperature for 30 minutes or until they are soft enough to eat.
