Freshly made chicken salad is stuffed into hallowed out cucumbers to make cups. Topped with a cherry tomato, these resemble savory cupcakes and are low-carb friendly.
Now that the unofficial start to summer is pretty much here, easy dinner options are a must! Our family typically does a lot of salads in the Summer, and this year is no exception.
That was a main motivator to make these Keto Friendly Stuffed Cucumbers with Grilled Chicken Salad. I knew by making them look like cupcakes, my kids would be more apt to eating them.
Stuffed Cucumber Cups with Grilled Chicken are pretty foolproof, and easy to construct. You can fill them with grilled chicken salad (my favorite) tuna–pretty much any mayonnaise based salad would do!
If you prefer the skin to stay intact on your cucumbers, you could leave it too. My kids are little picky eaters and do not care for the skin so I peeled and composted it before constructing my cups.
Having a sharp knife, and melon baller will help make forming the cucumber cups much easier. You want to try divide and cut as evenly across the cucumber as possible.
Doing so allows the cucumber cups to stand on their own without the risk of them falling over. The cherry on top of these Cucumber Cups Stuffed with Grilled Chicken Salad was a choice addition to make them resemble little cupcakes.
Are Cucumbers Keto Friendly?
Cucumbers make the perfect keto food because they contain negligible carbohydrates. In fact, you can incorporate cucumbers daily into your keto menu!
They will keep you hydrated and help you fight the possible keto flu! We love them because they are inexpensive, can be grown at home, and their mild flavor pairs well with proteins like chicken.
Best Keto Chicken Salad
My favorite spin on keto-friendly chicken salad is by using grilled chicken breast. I season them with salt & pepper, and grill fully.
I cook two large chicken breast to which I add 1/4 cup chopped white onion, and 1 celery stalk. Shred the chicken, and then combine that with 1/3 cup of maybe or so, and you have the tastiest chicken salad!
Grilled Chicken Salad Filled Cucumber Cups:
Ingredients-makes 9 cups
- 3 large garden cucumbers
- 1 pound of chicken salad ~I grilled my own, and shredded it up.
- 1/3 cup Kraft Mayo
- chopped celery
- chopped onion
- cherry tomatoes for the toppers.
Directions:
Wash, and peel your three cucumbers-cut off the very ends.
As even as possible cute your cucumbers into three even pieces.
Using a melon baller, or knife, carefully scoop out about an inch inside the cucumbers.
Fill them with the chicken salad mix {tuna would also work}.
Top with a cherry tomato.
Cucumber Cups Stuffed with Grilled Chicken Salad
Ingredients
- 1 lb chicken breasts
- 1/3 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 3 whole cucumbers
- 1/2 cup cherry tomatoes
Instructions
- Grill you chicken breasts until clear juices run freely from them.
- Shred chicken, and mix with your mayo and spices.
- Chill chicken until you are ready to stuff your cucumber cups.
- To make cucumber cups, cut your cucumber into three pieces. You will want to slice them evenly across so that they sit level on a plate.
- Using a melon baller, scoop out about 1 1/2 inches of melon.
- Fill cups with desired amount of chicken salad, and then top with a cherry tomato.
- These are really adorable party foods, and are perfect for “cupcake themed” parties.
